This week some of our Fruit and Veg boxes contained a complimentary fresh curry kit which will make you a delicious curry in 30 minutes.
In my haste to get it out to you the information with all the ingredients and what to do with it were left out.
So the first curry paste in the pot is a Malaysian curry paste, an authentic recipe from a great friend of ours. You can use this with Veggies of your choice, tofu or chicken (thigh rather than breast meat)
The ingredients are as follows:
Lemongrass, shallots, chilli, garlic, ginger, sugar and Soy sauce.
To use the paste (small veg box)
Chop one small onion roughly and and fry in a tablespoon of oil until soft and translucent.
Add Curry paste and fry for a few seconds until fragrant, (If adding chicken fry it along with the paste now)
Pour in coconut milk provided (add 100ml stock if you don't like it too thick)
Cook for 10 minutes add Veggies or Tofu then cook for another 10 minutes and its ready to serve.
If you like it hot add extra chilli when adding coconut milk.
